1. 2-4 Tbls Extra Virgin Olive oil
  2. 1 cup Kalamata Olives (Pitted)
  3. 1 tsp Dry Oregano
  4. 1/2 Tbls lemon zest
  5. ½ Tsp salt
  6. ¼ tsp freshly ground black pepper


  1. Put the olives, oregano, lemon zest, salt and pepper in a food processor
  2. With the processor running add the oil through the feed tube until it is a coarse paste.
  3. Serve chilled with Lite And Easy Croutons
