Gazpacho

Ingredients

  1. 1 Medium English Cucumber
  2. 2 Scallions
  3. 1 Red Bell Pepper
  4. 2 Tbs Fresh Dill
  5. 2 Tbs Fresh Cilantro
  6. 2 Tbs Mild Green Chili Pepper (Optional)
  7. 2 Cups Plum Tomatoes
  8. 1 Cup Tomato Juice (extra ½ cup may be used)
  9. 1 Lemon Juiced
  10. 1 Tbs red Wine Vinegar
  11. 1 Teaspoon Worcestershire
  12. 3 Drops Tabasco
  13. ½ Tsp Kosher Salt
  14. ¼ Tsp Pepper
  15. 1 Avocado

Instructions

  1. Chop the cucumber, scallions and red pepper into 1” pieces
  2. Put all of the remaining ingredients (except the avocado) into a food processor and pulse until the mixture has a thick and smooth consistency.
  3. Chill for 4 hours up to 2 days
  4. Serve chilled with sliced avocados and cilantro as a garnish
