Gazpacho
Ingredients
- 1 Medium English Cucumber
- 2 Scallions
- 1 Red Bell Pepper
- 2 Tbs Fresh Dill
- 2 Tbs Fresh Cilantro
- 2 Tbs Mild Green Chili Pepper (Optional)
- 2 Cups Plum Tomatoes
- 1 Cup Tomato Juice (extra ½ cup may be used)
- 1 Lemon Juiced
- 1 Tbs red Wine Vinegar
- 1 Teaspoon Worcestershire
- 3 Drops Tabasco
- ½ Tsp Kosher Salt
- ¼ Tsp Pepper
- 1 Avocado
Instructions
- Chop the cucumber, scallions and red pepper into 1” pieces
- Put all of the remaining ingredients (except the avocado) into a food processor and pulse until the mixture has a thick and smooth consistency.
- Chill for 4 hours up to 2 days
- Serve chilled with sliced avocados and cilantro as a garnish
