Fruit Terrine

Ingredients

  1. 2 cups water, plus 1/3 cup water
  2. 2 pkgs. unflavored Knox gelatin
  3. 3/4 cup Splenda
  4. 1/2 cup strained lemon juice from 2-3 lemons
  5. Zest of 1 lemon
  6. 3 cups mixed berries (raspberries, blueberries, and blackberries)

Instructions

  1. Place 1/3 cup water into a large bowl
  2. Sprinkle gelatin and stir to combine
  3. Set aside for 5 minutes to soften
  4. In a saucepan, bring the 2 cups of water, sugar, lemon juice and lemon zest  to a boil
  5. Pour 1/4 cup of the hot liquid into the gelatin
  6. Stir to dissolve
  7. Add the remainder of the hot liquid
  8. Chill for about 1-1/2 hours
  9. When slightly thickened, add the berries
  10. Pour into a 9 x 5 inch metal loaf pan
  11. Chill for at least 4 hours
  12. Un-mold by dipping pan into hot water for a few seconds to loosen
