Fruit Terrine
Ingredients
- 2 cups water, plus 1/3 cup water
- 2 pkgs. unflavored Knox gelatin
- 3/4 cup Splenda
- 1/2 cup strained lemon juice from 2-3 lemons
- Zest of 1 lemon
- 3 cups mixed berries (raspberries, blueberries, and blackberries)
Instructions
- Place 1/3 cup water into a large bowl
- Sprinkle gelatin and stir to combine
- Set aside for 5 minutes to soften
- In a saucepan, bring the 2 cups of water, sugar, lemon juice and lemon zest to a boil
- Pour 1/4 cup of the hot liquid into the gelatin
- Stir to dissolve
- Add the remainder of the hot liquid
- Chill for about 1-1/2 hours
- When slightly thickened, add the berries
- Pour into a 9 x 5 inch metal loaf pan
- Chill for at least 4 hours
- Un-mold by dipping pan into hot water for a few seconds to loosen
